Gluten Allergies and Sensitivities are among the most common in our country.

Many of us today suffer from multiple food allergies. Among the most pervasive is an allergy to gluten products. The affect of this allergy may be immediate or in many cases is an IgG  response that can take days to manifest. For this reason it can be difficult to know if you have a gluten allergy.

In its mild form it is considered Gluten Sensitivity. In its extreme it is called Celiac Disease.

Testing
If you suspect you have an allergy to gluten products and want to be certain then it is time to do some testing.

1. Glutn Sensivity Testing  - We offer a vaiety of Food Antigen Testing for wheat other foods.
2. Mucosal Immunity and Food Intolerances - This panel tests for Secretory IgA antibodies to Gliadin, Milk, Soy and Eggs. An excellent inexpensive screen for gluten/gliadin sensitivity.
3. Adrenal Stress Index Test  -  Gluten sensitivity often causes adrenal stress and fatigue. We offer the ASI which include a Salivary Test for gluten sensitivity.

Treatment
The only acceptable treatment for Celiac Disease requires a life-time adherence to a strict diet that avoids all products that contain gluten. An adherence to a gluten-free diet can prevent almost all complications caused by the disease.

Reading product food labels is important. Wheat is not the only offender, watch out for other offending grains such as rye, oats and barley. Remember products labeled wheat-free are not necessarily gluten-free.

Other key words to watch for are: farina, flour, caramel coloring, enriched flour, cereal, malt flavoring or extracts, MSG, modified food starch, emulsifiers, stabilizers, distilled vinegar, semolina, durum, and triticale.

Gluten is often used as a thickener. Be sure to read the labels on canned soups, catsups, mustards, soy sauce and other condiments -- many contain gluten.
