Published research over the past fifty years has shown that plant sterol esters play an important role in lowering the harmful form of cholesterol called low-density lipoprotein or LDL cholesterol. Long-term high dose supplementation with plant sterols may inhibit absorption of the pre-vitamin beta-carotene. This is easily counteracted by increased intake of carotene-rich vitamins or foods.
